Cooked this way, Jerusalem artichokes taste like potatoe pancakes, only sweeter.
Ingredients:
- 1 pound of Jerusalem artichokes
- 1 small onion
- 2 eggs
- 2 tablespoons of whole wheat flour
- sea salt and ground black pepper to taste
- grape seed oil
Method: Peel Jerusalem artichokes and onion, cut into chunks and drop them into a blender. Add eggs and flour, salt and pepper. Blend all ingredients until you get a smooth paste. Preheat pan and ad a little bit of grape seed oil. Form pancakes with a spoon and fry on a medium heat. Turn gently over when golden brown.
Serve with sour cream or apple sauce. Serves 4.
